Cooking Hints for Pork

Fresh Roast: Loins, Fresh Hams, and Shoulders

  • Roast at 325 uncovered on a rack
    • 1-4 lb roasts =40 minutes per pound
    • 5-7 lb roasts =30 minutes per pound
    • 8-10 lb roasts =25 minutes per pound
    • 11-13 lb roasts =20 minutes per pound
  • Pull the roast out when meat is 150 degrees. Rest for 20 minutes and the temperature will rise to 160 degrees

Smoked Hams: Full Bone, Semi-Boned, Boneless

  • The hams are fully cooked they just need to be warmed
  • Bake at 325 for 12 minutes per pound while covered
  • Glaze the last 30 minutes of cooking

Ribs:

  • Parboil for 40 minutes then grill for 15 minutes adding BBQ Sauce
  • Bake in oven at 325 for 1-1/2 hours
  • Crock-pot on High for 4 hours then grill or oven for 15 minutes adding BBQ Sauce

Tenderloins:

  • Grill or bake at 325 for 20-25 minutes
