Molasses-Coffee Glazed Ham

Ingredients:
- 1 Cup Molasses
- 1 (12 ounce) Jar of Apricot Jam
- 2 Tablespoons of Cider Vinegar
- 1 Tablespoon of Dijon Mustard
- 1 Teaspoon of Salt
- 1 Teaspoon of Vanilla Extract
- 3/4 Cup brewed strong coffee
- 1 (8 to 9 lb) Smoked Ham
Instructions:
- Stir together the first 7 ingredients until blended/ Reserve 1 cup of molasses-coffee sauce in a small bowl (Set the reserved sauce aside).
- Score the top of the ham in a diamond pattern. Place ham in a lightly greased 13-x-9-inch pan. Pour remaining molasses-coffee sauce evenly over ham.
- Bake on lower rack at 350 degrees for two hours or until meat thermometer inserted in the ham registers 140 degrees , basting it with the sauce in the pan every 15 minutes. Cover the ham loosely with lightly greased aluminium foil the last 30 minutes to prevent excessive browning if necessary.
- Remove ham from baking pan and let it stand at room temperature for 30 minutes. Heat the reserved molasses-coffee sauce and serve with the ham.
