Pork Tenderloin Diane

Ingredients:

  • 1 pound pork tenderloin cut into 8 pieces
  • 2 teaspoons of lemon pepper
  • 1 tablespoon of butter
  • 1 tablespoon of lemon juice
  • 1 tablespoon of Worcestershire Sauce
  • 1 teaspoon of Dijon Mustard
  • 1 tablespoon of minced parsley or chives

Instructions:

  • Place each piece of tenderloin between two pieces of plastic wrap and flatten gently with heel of hand
  • Sprinkle with lemon pepper
  • Heat the butter in a pan and cook the pork for 3-4 minutes on each side
  • Remove the pork and keep warm
  • Add lemon juice, Worcestershire Sauce and mustard to the pan
  • Cook and stir until heated through
  • Pour the sauce over the pork, sprinkle with parsley and serve
